Ingredients:
  • 1 Tuscan Herb Pork Tenderloin
  • 3 Tbsp. garlic, minced
  • 1 medium onion, diced
  • 1 large red pepper, diced
  • 1 Tbsp. extra virgin olive oil
  • 1 can (28oz) crushed tomatoes
  • 1 Tbsp. fresh basil, chopped
  • Salt and fresh ground pepper, to taste
  • Pasta (your favorite, cook according to package directions)
Directions:
  • Turn on your Pressure cooker (Instant Pot) to Sauté function. Add oil, garlic, onion and red pepper; cook for 3 minutes. Remove onion mixture, set aside. Add marinated tenderloin and cook until browned, 3 minutes on each side. Add onion mixture, tomatoes and fresh basil; close and lock lid. Set high pressure for 45 minutes. Allow time for pressure to build (approximately 10-15 minutes). After the 45 minutes; release the pressure 10-40 minutes. Remove lid and carefully shred pork with two forks. Serve over cooked pasta with salad and bread.
