Ingredients:
  • 1 package Hatfield® Touch of Sea Salt Roast
  • ¼ cup olive oil
  • 2 Tbsp. garlic, minced
  • ½ onion, diced
  • ½ cup red wine
  • 1 cup chicken broth
  • 2 sprigs fresh rosemary
  • ½ bag baby carrots
  • ½ bag baby red bliss potatoes, cut in quarters
  • ¼ cup balsamic vinegar
  • 2 Tbsp. cornstarch
Directions:
  • Turn on the sauté feature of the Instant Pot and add 2 tablespoons of olive oil.
  • Once the oil has heated, add onions and garlic. Cook for 4 minutes and then remove from pot.
  • Add additional 2 tablespoons of oil, then add pork roast and sear on each side for 3 minutes until browned.
  • Remove roast from pot and deglaze with broth and wine. Scraping brown bits from the bottom of the pot.
  • Add the garlic and onion back to the pot with fresh rosemary and place Instant Pot trivet on top.
  • Place the pork roast on the rack insert and cover the pot. Seal Instant Pot and set to manual high pressure for 70 minutes.
  • After 70 minutes, quick release pressure, add carrots and potatoes to the pot. Cover again and set for an additional 5 minutes.
  • Quick release again, remove potatoes, carrots and roast. Remove rack, throw away the rosemary sprigs and add the balsamic to the sauce. Whisk and sprinkle cornstarch to the sauce and continue to whisk until cornstarch is dissolved. Cook for another 3-5 minutes or until sauce thickens.
  • Slice roast and place on a platter, ladle sauce over and serve with potatoes and carrots.
