Ingredients:
  • 1 HATFIELD Ham steak, diced into ½ “pieces
  • 1 package of frozen or box of jasmine rice (cook according to package directions and cooled completely)
  • 1 Tbsp. sesame oil
  • 2 Tbsp. canola oil
  • 3 large eggs, beaten (scramble in a separate pan. Let cool completely)
  • 1 small onion, diced
  • 1 tsp. garlic, minced
  • 3 green onions, sliced thinly
  • 1 package sliced button mushrooms
  • ½ cup frozen corn
  • ½ cup frozen peas and carrot mixture
  • ¼ cup low-sodium soy
  • ¼ tsp. crushed red pepper
Directions:
  • In a large sauté pan, heat sesame and canola oil over medium high heat. Add onion, garlic and scallion. Sauté together for 2 minutes. Then add mushrooms, corn, pea carrot mixture, ham, soy and crushed red pepper. Cook for 5-8 minutes. Lastly, add rice and egg, stir until heated through. Serve hot!
