Ingredients:
  • 1 Honey Garlic Teriyaki Pork Tenderloin
  • 1 tsp. sesame oil
  • 1 tsp. olive oil
  • 1 medium white onion, diced
  • 2 Tbsp. garlic, minced
  • 1 Tbsp. freshly grated ginger
  • 2 Tbsp. tamari
  • 1 Tbsp. rice vinegar
  • ½ cup shredded carrot
  • 1 English cucumber, diced
  • 1 bag of shredded cabbage (coleslaw type mix)
  • ½ cup cooked edamame
  • 1 red pepper, julienned
  • 1/3 cup fresh parsley
  • 1/3 cup fresh mint
  • 1/3 cup fresh cilantro

Combine parsley, mint and cilantro together.

  • Noodles (ramen noodles or spaghetti – follow cooking directions on package, if using ramen noodle, discard seasoning pack) 1 lime, cut into wedges
  • Sweet Soy Sauce (drizzle over bowl once assembled)
Directions:
  • Cook noodles according to package directions.
  • Preheat grill for 10 minutes, grill tenderloin over medium high heat for 10-12 minutes per side; cook until internal temperature reaches 145°F at the thickest part. Once cooked, remove from grill and let rest for 3 minutes before slicing.
  • In a medium sauté pan on medium high heat, add sesame and olive oil to pan. Then add the onions, garlic and ginger; sauté until onions are translucent. Lastly, add the rice and tamari; stir together.

To assemble the bowl:
In a bowl, place noodles in the bottom, top with sliced pork, cucumber, carrots, cabbage, red pepper, edamame and herb mixture. Drizzle with sweet soy sauce and serve with lime wedge.
