  • ½ lb Hatfield® Hardwood Smoked Uncured Bacon
  • 1 lb sweet potatoes, cut into wedges
  • 1 tsp cumin
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp minced garlic
  • 2 Tbsp olive oil
  • 8 oz sour cream
  • 2 Tbsp lime juice
  • 2 oz chopped chives
  • Preheat oven to 375ºF.
  • In a medium bowl, mix together cumin, salt, pepper, garlic, and olive oil.
  • Add the sweet potato wedges and toss to coat evenly.
  • Place wedges in a single layer on a nonstick or greased baking sheet.
  • Roast until crisp, about 35 minutes, turning halfway through.
  • Place bacon in a single layer on a sheet pan and bake for 25 minutes, or until crisp. Remove from oven and crumble.
  • Combine sour cream and lime juice. Mix well.
  • Place roasted potatoes on a plate, drizzle with sour cream, top with bacon, and garnish with chives.
