  • 1 Hatfield® Honey Garlic Teriyaki Tenderloin, trimmed and julienned
  • 1 Tbsp olive oil
  • 1 large onion, thinly sliced
  • 1 small jalapeño, diced
  • ½ cup chicken broth
  • 1 plum tomato, chopped
  • ¼ cup chopped fresh cilantro
  • 2½ Tbsp fresh lime juice and the zest of one lime
  • 8 flour tortillas, warm
  • Your favorite Mexican toppings: shredded lettuce, grated cheese, salsa, sour cream, etc.
  • Heat oil in a large sauté pan over medium high heat. Add pork and sauté for 4 minutes, or until browned. Remove from pan, set aside.
  • Add onions and jalapeño to pan and sauté until tender, about 5 minutes.
  • Add broth, reduce heat, and simmer for 1 minute, scraping pan to loosen browned bits.
  • Stir in tomatoes and simmer for 3 more minutes.
  • Return pork to pan, stir in cilantro, lime juice and zest, and cook for 2 minutes, or until pork is cooked through.
  • Spoon filling onto tortillas, then top with your favorite Mexican toppings.
