  • 1 Hatfield® Touch of Sea Salt Pork Loin Filet, cubed
  • 1½ Tbsp olive oil
  • 2 eggs, beaten
  • ½ cup diced carrots
  • ½ cup chopped broccoli
  • 2 cups cooked rice, cooled
  • ¼ cup green peas
  • 1½ tsp soy sauce
  • ⅛ tsp ginger
  • 1 scallion, chopped
  • Heat 1 tsp olive oil in a large sauté pan over medium heat. Add egg and
  • cook until scrambled, then set aside.
  • Add remaining oil to pan and increase heat to medium high. Sauté broccoli and carrots until tender, then remove from pan and set aside.
  • Add pork to pan and sauté for 5-6 minutes, or until cooked through.
  • Add rice, peas, soy sauce, and ginger. Cook until rice is heated through.
  • Toss in eggs and vegetables, stir to combine, and cook until heated through.
  • Place fried rice in bowls and garnish with scallion.
