  • 1 pack Hatfield® Recipe Essentials Hot Italian Ground Sausage
  • 2 Tbsp olive oil
  • A dash of salt
  • 1 medium onion, diced
  • 3½ cups chicken broth
  • ½ lb pasta (your choice: penne, orecchiette, or linguine)
  • ½ cup arugula
  • ¼ cup shaved parmesan cheese
  • Heat oil in a deep pot over medium heat.
  • Add onions and salt. Sauté until soft and caramelized, about 7 minutes.
  • Add sausage and cook, stirring and breaking up with a spoon. Cook until sausage is fully browned, about 10 minutes.
  • Add 1½ cups chicken broth, then bring to a boil, stirring frequently to keep sausage off the bottom of the pan.
  • Once broth boils, add pasta to the hot broth and cook until liquid has been absorbed.
  • Add remaining broth as needed until pasta is cooked through and most of the broth is absorbed, about 15 minutes.
  • Add arugula and stir until it wilts.
  • Ladle pasta into bowls and sprinkle with parmesan cheese.
