  • 1 Hatfield® Montreal Style Pork Loin Filet
  • 2 (10 oz) boxes chopped frozen spinach, thawed and squeezed dry
  • 1 Tbsp unsalted butter
  • ¼ cup finely chopped white onion
  • 2 tsp minced garlic
  • 8 oz cream cheese, room temperature
  • 1 tsp salt
  • ¼ tsp red pepper flakes
  • 2 cups parmesan croutons, lightly crushed
  • Preheat oven to 375°F.
  • Place pork loin in shallow roasting pan. Cover with foil and bake for 25 minutes. Remove from pan and rest for five minutes, then slice.
  • Meanwhile, melt butter in a medium sauté pan over medium high heat.
  • Add onion and cook until soft, about 3-5 minutes.
  • Add garlic and cook for another 20 seconds.
  • Add spinach, cream cheese, salt, red pepper, and half the parmesan croutons. Stir until well combined.
  • Transfer to a large greased baking dish and top with the rest of the croutons.
  • Bake until warm and golden, about 15 minutes, then serve with sliced pork loin.
