  • 1 Hatfield® Honey Chipotle Pork Tenderloin
  • 2 medium tomatoes, chopped
  • 1 cup frozen corn, thawed
  • 1 can (10 oz) black beans, rinsed and drained
  • ½ small red onion, diced
  • ½ cup chopped fresh cilantro
  • 1 jalapeño, finely chopped
  • Juice of 1 lime
  • ¼ tsp ground cumin
  • Salt and pepper to taste
  • 8 corn tortillas, warmed
  • Sour cream, sliced avocado, and lime wedges (optional)
  • Preheat grill to medium high heat.
  • Place tenderloin on center of grill and grill, with lid closed, for 10-12 minutes.
  • Turn loin over and grill for another 10-12 minutes or until internal temperature reaches 145ºF and juices run clear. Remove from grill and rest for 5 minutes before slicing.
  • While loin is resting, combine tomatoes, corn, beans, onion, cilantro, jalapeño, lime, and cumin in a medium bowl. Mix gently and season with salt and pepper to taste.
  • Warm tortillas and arrange on a plate, then top with pork and salsa and serve.
  • If desired, garnish with sour cream, avocado, and lime.
