  • 1 Hatfield® Classic Ham Steak, cut into ¼-inch by 1-inch pieces
  • 1 Tbsp butter
  • 1 Tbsp olive oil
  • 1 large russet potato, diced
  • ½ cup onion, diced
  • ½ cup red pepper, diced
  • ½ cup orange pepper, diced
  • ½ cup poblano pepper, diced
  • Heat butter and oil in a large sauté pan over medium high heat, until butter melts and foams.
  • Add ham and sauté until lightly browned, stirring occasionally. Remove from pan.
  • In the same pan, add potatoes and cook for 10-12 minutes or until cooked through on the inside and slightly crispy on the outside.
  • Add onions and peppers and cook, stirring occasionally, until onions are translucent and peppers are tender, about 5 minutes.
  • Return ham to the skillet. Mix well, and cook for 3-4 minutes, or until ham is heated through.
  • Season with salt and pepper to taste.
  • Serve topped with a fried or poached egg.
