Ingredients:

For the Kabobs:

  • 2 package HATFIELD® Chili Verde Pork Tenderloin, cut into 1 inch pieces
  • 2 cups fresh pineapple, cut into 1 inch pieces
  • 2 large red peppers, cored, seeded and cut into 1 inch squares
  • 16 Wooden Skewers

For Coconut Cilantro Lime Rice:

  • 2 cups white rice
  • 1 can coconut milk (15 oz.) plus water
  • 2 Tbsp. butter
  • ½ cup fresh chopped cilantro
  • Juice of 1 lime, plus lime zest
  • ½ cup toasted coconut (garnish)
  • Kosher salt, to taste
Directions:

For Kabobs:

  • Preheat grill to medium-high heat.
  • Thread the pork onto skewers alternating with pineapple, peppers and onion.
  • Grill kabobs for 3-4 minutes on each side, until lightly charred and pork is cooked through.

For rice:

  • Cook rice according to package directions, using coconut milk and water. When rice is finished cooking remove from heat, stir in butter and salt.
  • Stir in cilantro, lime, zest and garnish with toasted coconut.
  • Serve with pork kabobs.
