Ingredients:
  • 2 pounds Hatfield® Recipe Essential Chorizo Sausage
  • 1 can chipotle chilies in adobo sauce
  • 2 Tbsp Olive oil
  • 2 bunches of scallion, chopped
  • 1 ½ cups onion, chopped
  • 1 cup green pepper, chopped
  • 1 ½ cups red pepper, chopped
  • 2 Tbsp minced garlic
  • 2 Tbsp chili powder
  • 1 Tbsp ground cumin
  • Juice of 1 lime
  • 2 tsp oregano
  • 3 cans black beans, drained and rinsed
  • 3 cans diced tomatoes, undrained
  • ¾ tsp salt
  • ½ tsp black pepper
  • Garnish: Sour Cream and Tortilla Chips
Directions:

Remove 2 chilies from the can; finely chop.

Heat a large pot on the stove medium-high heat, add oil, chilies, onions, peppers and garlic sauté 5 minutes until tender.

Add chorizo, chili powder and next 5 ingredients, stirring to combine.

Bring to a boil, reduce heat and simmer for 35 minutes, occasionally stirring. Remove from heat add salt and pepper.

Ladle into bowls, top with sour cream and scallion, serve with tortilla chips.
