  • 1 pkg Hatfield® Recipe
  • Essentials Simply Pork Strips
  • ¼ cup natural peanut butter
  • ½ cup hot water
  • 1 Tbsp fresh minced garlic
  • 2 Tbsp unseasoned rice vinegar4
  • 2 Tbsp low-sodium soy sauce
  • 1 Tsp freshly grated ginger
  • 2 Tsp fresh lime juice & zest of 1 lime
  • 1 Tsp sesame oil
  • 1 Tsp honey or agave
  • ½ Tsp cornstarch
  • 1 Tsp crushed red pepper flakes
  • 2 Tbsp olive oil
  • 1 red bell pepper, julienned
  • 1 bunch scallions, chopped
  • 2 Tbsp fresh cilantro, chopped
  • Place peanut butter in a medium-sized bowl and add hot water slowly, whisking to combine.
  • Add garlic, rice vinegar, soy sauce, ginger, lime juice and zest, sesame oil, honey, cornstarch, and crushed red pepper flakes. Mix well, then set aside.
  • Heat olive oil in a large sauté pan over medium high heat. Add pork strips and peppers. Cook for 10 minutes or until pork is cooked through.
  • Add scallions, cilantro, and peanut sauce, stirring until pork is coated.
  • Serve over warm brown rice or angel hair pasta.
