  • 6 pieces Hatfield® Uncured Bacon, roughly chopped
  • 2 packs Udon noodles
  • 2 tsp sesame oil
  • 1 Tbsp fish sauce
  • 1 Tbsp chili garlic sauce
  • ½ medium onion, sliced
  • ½ lb (about 20-25) shrimp, peeled and deveined
  • 2 eggs, lightly beaten
  • 2 Tbsp chopped fresh cilantro
  • 2 Tbsp chopped fresh mint
  • 2 Tbsp chopped fresh basil
  • Bring a large pot of water to a boil. Add noodles and cook until tender. Drain, rinse, and set aside.
  • In a bowl, combine sesame oil, fish sauce, and chili garlic sauce. Set aside.
  • Heat a large sauté pan over medium high heat. Add bacon and cook until golden brown.
  • Add onion and shrimp and cook until onions are soft and shrimp are cooked through, about 2 minutes.
  • Stir in eggs and cook until cooked through, about 1 minute.
  • Add noodles and sauce and stir to coat. Cook until noodles are heated through.
  • Remove from heat, toss with fresh herbs, and serve immediately.
