Ingredients

PORK, 20% SOLUTION [WATER, SEASONING (LEMON JUICE POWDER (LEMON JUICE, PEA STARCH, SALT), VINEGAR POWDER, SEA SALT, FLAVORING, NATURAL FLAVOR (PEA STARCH, CITRUS FIBER, CITURUS FRUIT EXTRACT))], UNCURED BACON-NO NITRITES OR NITRATES ADDED EXCEPT THOSE NATURALLY OCCURING IN SEA ALT AND CELERY POWDER (PORK, WATER, TURBINADO SUGAR, SEA SALT, CELERY POWDER, CHERRY POWDER, NATURAL SMOKE FLAVOR).

Cooking instructions

Grill
  • Remove outer packaging; leave blue heat-resistant pin in during cooking.
  • Spray grill grate before preheating with cooking spray.
  • Preheat grill to medium-high heat.
  • Place medallion on preheated grill and cook for 4-6 minutes.
  • Turn medallion over and cook for an additional 4-6 minutes, to an internal temperature of 145ºF.
  • To crisp bacon, preheat oven to 375ºF minutes and cook for an additional 5 minutes.
  • Remove blue heat-resistant pin and serve after 3 minutes.

Oven
  • Remove outer packaging, leave blue heat-resistant pin during cooking.
  • Preheat oven to 375ºF.
  • Prepare a baking tray; place bacon-wrapped chop on tray and into oven.
  • Cook for 8-10 minutes.
  • Flip bacon-wrapped chop and cook for an additional 8-10 minutes, to an internal temperature of 145ºF.
  • Remove from oven and remove blue heat-resistant pin, then serve after 3 minutes.
Skillet
  • Remove outer packaging.
  • Preheat non-stick skillet to a medium-high temperature with cooking spray.
  • Place medallion in its side, so the bacon is touching the skillet.
  • Cook for 2 minutes, then rotate bacon to next raw section and repeat 2 minute cook process until bacon is crispy to your preference
  • Once bacon is cooked, place medallion flat side down on the skillet and cook for 8 minutes.
  • Flip medallion and cook for an additional 8 minutes, until internal temperature 145°F
  • Remove from heat and serve after 3 minutes.
